WHAT YOU’LL NEED
Meatballs (I would allow approx 4 meatballs per person depending on the size of the person – and the size of the meatball to be honest!!). I bought Sainsburys’ 10% fat meatballs
500ml passata
1 tbsp tomato puree
1 onion (although I use frozen ready chopped onions so that I always have some to hand)
1 garlic clove (again I buy frozen chopped garlic so that I always have it ready in the freezer)
1 tbsp olive oil
100ml water
200g orzo (this looks like rice but is infact a type of pasta)
Grated reduced fat mozzarella
Fresh basil leaves (optional)
METHOD
Preheat the oven to 170 degrees (fan)
Heat the oil in a large saucepan and add the onion and garlic. Cook for 2-3 mins until softened
Add the meatballs and cook for an extra 2-3 mins until they are browned.
Add in the passata, water, tomato puree and stir.
Transfer the meatball mix to a roasting tin, put in the oven for 30 mins.
Rinse the orzo under a cold tap, drain well then add to the meatball mix.
Add more water to the meatball bake if it’s becoming too dry.
Scatter over the cheese and bake for a further 10-12 mins
Once cooked, feel free to scatter over the basil before serving!
