Serves 2
WHAT YOU’LL NEED
2 handfuls of pecan nuts
3 – 4 eggs depending on size
1 tsp of baking powder
4 heaped tbsp of Buckwheat flour (coconut or almond flour would work well for completly carb free, but just use 3 tbsp, )
4 – 5 tbsp of plant based milk
A generous pinch of cinnamon and nutmeg
A little coconut oil for frying
METHOD
- Throw all the ingredients into your nutribullet, or using a bowl and stick blender whizz together to make a thick batter.
- Get a good non stick frying pan , a small one works best here.
- On a medium heat add to the pan a little coconut oil to melt, then put around a ladle full of batter in
- Gently fry, when air bubbles appear on top its time to flip!
- Enjoy with a sqeeze of lemon, some no sugar coconut yogurt or a little nut butter!!
- When not on detox or reset try adding in 1 banana or top with blueberries and a drizzle of maple!
