(adapted from a Mindful Chef receipe)
makes 10 balls
These little power balls are energy dense little power houses! They are perfect pre or post training, as a mid afternoon pick me up or even for the kids when they come home from school (I also like them as a breakfast on the run!)
They are super simple to make and don’t require any baking. They are full of protein, vitamins and omega-3 fatty acids. The only thing to watch out for is that they are very moreish, yet as they are so energy dense, you don’t want to be eating any more than say 2 at a time!
WHAT YOU’LL NEED
120g peanut butter (or almond butter if you prefer)
50g ground flaxseed
2 tbsp maca powder (you should have some of this in your cupboards from some of our smoothie recipes) – It’s a great energy booster
1 tbsp chia seeds (these should also be a staple in your cupboard and are super high in omega 3)
1tbsp desiccated coconut
1 tbsp maple syrup
15 g cashew nuts, finely chopped (I covered mine with baking paper and hit with a rolling pin!)
METHOD
- Mix all the ingredients (apart from the cashew nuts) in a bowl until fully combined
- Form in to 10 smallish balls
- Roll the balls in to the smashed cashew nuts
- Place in the fridge for 30 minutes to ‘set’
